Thisis a classic delicate, gourmet rosé champagne. It has great structure and anattractive character. The finish is impressively long at more than 12seconds. There is a hint of salinity as well as chalky minerality. The initial aroma is fruity (strawberries and redcurrants) and floral(peonies). Wheat, biscuit and crème fraiche notes are detectable, as are hintsof more roasted flavours. The initial taste is clean, and then opens upto a pleasant structured quality. There is real harmony to this wine, bolsteredby fine acidity, light tannin notes and discrete sweetness. Because it sparklesenthusiastically, the texture goes from ‘gentle’ to ‘firm’ and back again.
