There are 4 parcels of Shiraz, one of which is co-fermentedwith Viognier, which are usedfor the 2012 Shiraz Viognier. The batchesare cold soaked, fermented todryness and undergo malolactic fermentation intank. The resulting wine, which is 5% Viognier, undergoes 18 months ofmaturation in French oak, one-third of which is new, before bottling. Thereare intense flavours cherries are interwoven with dark chocolate and savouryspices. The palate is supported with chewy tannins and culminates in a softjuicy finish.
